1 pound Red Potatoesor baby potatoes

1/2 pound Green Beansends trimmed

1 tablespoon Dijon Mustard

3 tablespoons Red Wine Vinegar

3 tablespoons Fresh Parsleychopped

1 teaspoon Sea Saltor Himalayan salt

1/2 teaspoon Black Pepper

2 (12oz) packs Albacore Tuna In Wateror cans

1/2 cup Pitted Kalamata Olivesdrained and rinsed
Directions
I have a habit of going out to eat and literally picking apart everything I eat. The most unusual thing on a menu was a Tuna Nicoise Salad. But it was Friday, and we have our meatless meals on Fridays. I thought I could tweak this salad to keep it clean and in my eating plan. Unfortunately the kids wouldn’t touch it. No surprise there! But for the adults… it hit the spot. This “salad” has a fresh lemon zing with some fragrant garlic. The thing I like best is that it has everything in it like veggies, potatoes and lots of protein!

Bring potatoes to boil and cook until tender, about 12-15 minutes. (Do not over cook the potatoes will become too starchy). Rinse under cold water. Once cooled cut into quarters. |

Place green beans in a steaming pan, and steam until crisp tender. (If you don't have a steamer, you can microwave them in a bowl with about 1/4 cup of water for about 4 minutes.) |

In a bowl, whisk the garlic, mustard, vinegar, oil, parsley, salt and pepper. Add the tuna and stir breaking up the tuna and combining the dressing. |

Cut eggs into quarters. |

Combine the potatoes, eggs, green beans, olives and toss gently with the tuna dressing mixture. This can be served as prepared or refrigerate for about an hour to let the flavors combine. |
